General:Lead, direct and supervise a diverse staff population. Oversee all dining service operations. Develop and evaluate facilities and operating units according to goals and procedures, budgets, policies and compliance requirements. Lead all departmental marketing, training, strategic planning and quality assurance programs. Routinely review and analyze data and information affecting food costs, inventory, purchases and sales. Coordinate facility review on an ongoing basis to assess renovation needs, capital expenditures and related budget planning. Recommend facility construction, remodeling, expansion or restructuring need based on customer utilization, safety, and efficiency considerations.Administration:Ensure that all employees responsible for cash handling have completed appropriate training and all cash handling procedures are followed. Responsible for management and control for all inventory. Oversee all departmental personnel matters, including selection, professional development, leave, corrective action and termination. Monitor all departmental purchases, ensuring that they are in compliance with university, state and federal rules. Must be knowledgeable of bid processes and purchasing procedures. Monitor product ordering and vendor payments, including vendor rebates. Responsible for ensuring cost structure provides required revenue stream to maintain sound financial position. Should be able to read and interpret financial statement data. Monitor operations to maintain compliance with health department requirements, University Rules and System Policy.Production & Presentation:Supervise the preparation of daily menus, menu cycles and recipes. Provides high quality customer service and ensures product is of the highest quality. Ensures that menu is presented in an appealing manner. Ensures that all food service facilities are in compliance with health codes. Responsible for maintenance and repair of facilities. Catering: oversees catering operations, including menu development, product ordering, pricing, event coordination, and invoicing. Ensures that each event is properly staffed and has appropriate supervision. Ten (10) or more years experience in dining service management, preferably in higher education, healthcare or other educational institution.
