Monitor product ordering and vendor payments, including vendor rebates. Responsible for ensuring cost structure provides required revenue stream to maintain sound financial position. Should be able to read and interpret financial statement data. Monitor operations to maintain compliance with health department requirements, University Rules and System Policy.Production & Presentation:Supervise the preparation of daily menus, menu cycles and recipes.
